Nutella Cream Cheese Cinnamon Buns

 

Prep Time: 2 hours               Bake Time: 325°f 30-35 minutes              

Yield: 7-8 rolls

The dough

 

Yeast mixture

  • 1 ¼ cup warm whole milk
  • 1 pkg. Instant dry yeast
  • ½ tsp. sugar

Wet

  • 2 tsp. vanilla extract
  • 1 egg
  • 4 ½ tbsp. unsalted melted butter
  • ¼ cup granulated sugar

Dry

  • 3 cups all purpose flour
  • 1 tsp. salt
  • ½ tsp. ground cinnamon
  • ¼ tsp. nutmeg

For the bowl

  • 2 tbsp. melted butter  

The Filling

  • 10 tbsp. unsalted butter softened
  • ¼ cup granulated sugar
  • 1 ½ tbsp. ground cinnamon

Dusting

  • All purpose flour

The Spread

  • 4 ½ tbsp. unsalted butter, melted
  • 1 pkg. cream cheese, softened
  • 1-cup confection sugar
  • 2 tbsp. heavy cream
  • 1/3 cup plus 3 tbsp. Nutella

Topping

  • Chopped dark chocolate 

Directions

In a large measuring bowl add your warm milk, yeast packet and sugar.  Do not stir, set aside and leave until it starts to foam at the top.    In a large mixer fitted with a dough attachment, add the flour, salt, cinnamon and nutmeg.  Turn mixer on low and slowly add your yeast mixture, egg, vanilla and melted butter.

Continue to mix on low until dough is firm to the touch, about 5-7 minutes. If the dough is too wet, then add a little flour and if dry add milk.   In a separate bowl melt the 2 tbsp. of unsalted butter, remove the dough ball from the mixer and add to the bowl with the melted butter.    Turn the dough ball over until fully covered with the butter, cover and set aside in a warm location.    Let rise for 1 hour.  

Once dough is ready, dust a clean surface with all-purpose flour and place your dough ball in the center.   Knead your dough ball for about 1 minute.   Next use a rolling pin, and roll the dough as thin as possible into a square pattern.   Using a pizza cutter, finely trim the dough to make it a perfect square pattern.   Discard the cuttings.

Combine the cinnamon and sugar in a separate bowl.  Mix to properly incorporate and set aside.

Using a basting brush or spoon, place the softened butter in the center of the square and spread to cover the entire surface.   Next sprinkle the cinnamon, sugar blend over the surface.  Be sure to get equal coverage across the surface.

Gently roll the dough into a circular tube shape and using a sharp knife make cuts in the dough about every 2”.  You should have 7 to 8 rolls marked out, now go back with your knife and gently push down on your cut marks and separate each roll.

Grease a standard pie or cake pan with butter and place the rolls in the pan.  Place on the center rack in the oven and bake 325°f between 30-35 minutes.

 

 

Place on counter and let completely cool before you add the spread and topping.  

Grab a cup of coffee, cut and enjoy.
